Drink them. That’s right, we’re drinking our greens. Just because we’re living on a boat with the world’s smallest kitchen doesn’t mean we can’t eat (or drink) healthy stuff. We fell off the wagon with these over the winter, but now that it’s warmer out we try to drink a green smoothie every day. I know, gross, right? But it’s tastier than you’d think (I happen to love them) and a great way to get several servings of fruit and greens in first thing in the morning. I even get Rich (who normally doesn’t eat anything until dinner) to drink one with me. I’ll admit I was dubious at first because they do sound weird, but trust me when I say green smoothies are really good, and good for you! A few tips: I buy the bruised bananas that they mark down at the grocery store so they’re already nice and sweet. I peel them and put them in the freezer in a Ziploc bag until I need them. I also buy frozen peaches and blueberries because it’s easier and they make the smoothie nice and cold. I don’t do this but if you want to make it sweeter you can add a little agave.
You can use any combination of fruit and greens you like, but here’s my basic recipe:
2 cups water (or more to reach desired thickness)
1–2 cups greens (I like spinach)
1 cup peaches
1/2 cup blueberries
1 apple (sliced into wedges)
Pour all ingredients into the blender. Blend and serve. Then go about your day feeling all virtuous!
